‘Kitchen Feasts’ is the perfect description for Vanessa Pine’s wonderful collection of recipes and culinary adventures. Vanessa’s dream is to write a cookbook and to open a café of her own one day. In the meantime, you can follow her journey there through the pages of her blog. Vanessa - joined by her husband D, their son Alexander and their two pets, Labrador Cara and Lawrence the Cat - are on a quest to find ‘a healthier and easier lifestyle.’ The blog is full of recipe inspiration with a lot of ‘what’s in my fridge’ tips to help use up those pesky leftovers. Each recipe is clearly explained with easy-to-follow steps and mouth-watering photography. Some of our favourites are her Fruity Couronne, a nod to D’s Polish background. The Courgette & Goats Cheese Tart was a winner, as well as this delicious Moroccan Chicken Tagine. Of course we have to pick our dish featuring yogurt – it’s the Raspberry and White Chocolate Loaf - yum! Kitchen Feasts is primarily a food blog but Vanessa also shares tales about her daily life, her highs and lows, her family and her pets, giving the blog a more personal feel. Reading the blog feels like having a catch up with a friend, while picking up some great recipes. So grab a cuppa, log on and make friends with Vanessa and Kitchen Feasts!
Endorphin Stew, owned by Ryan Mangan is the new kid on the food blogging block. Ryan has experienced first-hand how eating good, wholesome foods can have a positive overall effect on your physical and mental wellbeing and thus decided to document his journey to a happier and healthier life with Endorphin Stew.
As a full time student, Ryan is used to cooking on a budget and shows how to avoid mindless spending (which we’re all guilty of) and get the best out of your shop. His weekly meal prep posts are a great source of inspiration when planning for the week ahead and while everything is created with a healthy diet in mind, there is a good balance between sweet and savoury. Some of our favourite recipes include these Healthy Baked Falafel, Ryan’s Honey ‘Nutgurt’ and what about these Sugar-free protein muffins (the dream!)? Endorphin Stew is all about simple, tasty foods that are good for you and are made with the best ingredients. Why buy something pre-made when you can make it at home and know exactly what is going into it? Ryan’s love for healthy foods and his joy in food experimentation is clear throughout the blog, motivating us to get into the kitchen and get stuck in! Check out Endorphin Stew today.
Brought up on a family farm in Co. Tipperary, Sinéad Delahunty was always surrounded by home grown fruit and vegetables, fresh eggs and milk and wholesome cooking. Now a trained physiotherapist and a big sports fan, Sinéad has a huge passion for food - experimenting and developing recipes, creating healthy alternatives and now, blogging about her endeavours. Delalicious celebrates the healthy and nutritious while also taking care of the taste. In a very short space of time, Sinéad has created a series of easy to follow recipes, clearly illustrated and so more-ish. Courgetti seems to be the food du jour in the health space and this Creamy Smoked Salmon Courgetti proves why; it's the perfect light option for a mid-week dinner minus the carbs! Snacking can often be a downfall when trying to keep it healthy but Sinéad comes to the rescue with a selection of smart options to keep the hunger pangs at bay. Some of our faves are her Minty Beetroot hummus with oatcakes (she makes her own oatcakes folks!) and these delicious Oat & Spelt Seed Scones.
However don't be fooled, although Sinéad likes to keep it clean, she does have a few sweeter options on the menu such as her Healthy Carrot Cake with Yogurt Icing (we've tried it, it uses yogurt - we had to!) and her Apple & Pear Ginger Crumble is not to be missed. Log on to Delalicious today and have your apron at the ready - you're going to want to make everything!
