6 medium sized carrots grated
1 tbsp olive oil
Juice 1 orange
1 tbsp hot chilli sauce

100g sunflower seeds toasted on a dry pan

Carrot and Sunflower Seed Salad with Orange Chilli Yogurt Dressing

Method

  1. Grate carrots into a large bowl.
  2. Mix the olive oil, orange juice, chilli sauce, yogurt and salt & pepper in a jar and shake to make up dressing.
  3. Drizzle dressing over carrots and top with toasted seeds. Garnish with fresh herbs.
