100g light mayonnaise 2 tablespoons cider or white wine vinegar

Salt and pepper

1 tsp Dijon mustard

Summer Coleslaw


  1. Grate carrots and finely slice cabbage
  2. Mix together and place in a bowl
  3. Whisk dressing ingredients together and pour over salad but don't mix in until serving to prevent sogginess.
  4. Decorate with red cabbage.
