Ingredients

1kg new baby potatoes, halved

2 x 500g Glenisk Greek Style Natural yogurt

2 cloves of garlic, chopped finely

30g dill, finely chopped

2 bunches of spring onion, finely sliced

2 tsp sea salt

tsp black pepper

1 lemon juice and zest ​

3 tbsp olive oil

500g frozen peas

New Potato Salad

Method

  1. Boil the potatoes for 10-12 minutes or until cooked.
  2. Strain and leave in a bowl to cool.
  3. In a separate bowl, combine the Glenisk yogurt, garlic, dill, spring onions, sea salt, black pepper, lemon juice and olive oil.
  4. Mix together and add to cooled potatoes.
  5. Add peas and mix well.
  6. For dressing, put all the ingredients into a blender and mix until blended.
  7. Serve in a bowl with grated lemon zest and chopped spring onion.
