1 kg potatoes, peeled and roughly chopped
150g curly kale, washed and thinly sliced
100g scallions, washed and finely chopped
250g Glenisk Organic Crème Fraîche 
25g butter
Salt & ground black pepper

Traditional Irish Colcannon


  1. Cook the potatoes in a pot of boiling water with a pinch of salt until tender. This should take about 25 minutes.
  2. Meanwhile heat and melt the butter in a large frying pan and sauté the kale with a pinch of salt for about 3 minutes, constantly stirring.
  3. Add the chopped scallions and continue to cook for another minute.
  4. Drain the potatoes, add in the Crème fraîche and mash until smooth.
  5. Add in the kale and scallions and mix/beat well.
  6. Season with salt and pepper.
  7. Serve as a side with your favourite Irish dish!
