100g plain flour

1 tsp baking powder

1 egg

100ml full fat milk

100g peas

100g sweetcorn

2-3 tsp oil for frying

Pea & Corn Fritters


  1. Place the flour, baking powder, egg, milk and half the sweetcorn and pea mix into a food processor and blitz to a smooth consistency.
  2. Add in the remaining sweetcorn and peas and stir well.
  3. Heat a little oil or butter in a frying pan over a medium/high heat.
  4. Once hot, add a spoon of the batter mix into the frying pan.
  5. Fry the fritters for 2-3 minutes on each side or until golden brown.
  6. Combine the yogurt and dill in a separate bowl and mix well.
  7. Serve the fritters with a dollop of dip on top.
