Place the biscuits in a bag and crush with a rolling pin or place in a food processor and blitz until a crumble consistency is formed. Combine the biscuits and melted butter in a bowl until well combined.
In a mixing bowl, whisk the yogurt to loosen a little.
To assemble: divide the crushed biscuits amongst four glasses or small bowls and press down firmly into the base. Spoon in the yogurt. Top with the fresh mint leaves, lemon zest and a sprinkle of the crushed biscuits.
