- 1/2 Cucumber
- 1 tsp cumin,
- 1 clove garlic (minced)
- Juice of 1 lemon
- Bunch fresh mint
- 1 tbsp extra virgin olive oil
- 150g Glenisk 0% Fat Natural Irish Strained Protein Yogurt
- 1/4 tube of Wyldsson Promix 9 Toasted pecan
method
- Chop the cucumber and mix with the chickpeas
- Squeeze over the lemon juice and add the minced garlic
- Season with salt & pepper and 1 tsp cumin
- Sprinkle over the mint leaves
- Add Glenisk 0% Fat Natural Irish Strained Protein Yogurt & Serve
