Ingredients:
  • Base: 1 large potato (scrubbed)
  • Coating: 1 tsp olive oil and a generous pinch of salt
  • Bacon: 3–4 slices of thick-cut bacon
  • Protein: 1/2 cup Glenisk Natural Fat Free Cottage Cheese
  • Garnish: Fresh chives (chopped) and black pepper

recipe steps
  • Season & Bake: Rub the clean, dry potato with olive oil and generous amount of salt.
    • Prick with a fork and bake at 200°C (400°F) for 45–60 minutes until the skin is salty and crisp.
  • Render the Bacon:
    • Dice: Slice cold bacon into small squares.
    • Cook: Place in a cold pan over medium-low heat.
    • Render: Cook slowly until the bits are golden and crispy. Drain on a paper towel.
  • Assemble: Split the hot potato, fluff the inside, and fill with a large scoop of Glenisk Natural Fat Free Cottage Cheese.
  • Finish: Top with the crispy bacon and fresh chives.
