  1. 175g light soft brown sugar
  2. 300ml Glenisk cream
  3. 50g butter
  4. ½ tsp sea salt

 To serve

  1. Your favourite ice-cream
  2. Chopped pecans
method
  • Put all the ingredients (apart from the ice-cream and pecans) in a saucepan.
  • Cook over a low heat, and stir until the sugar has dissolved.
  • Turn the heat up and bubble the sauce for 2-3 minutes until golden and syrupy.
  • Leave to cool for 10 minutes before serving.
  • Scoop ice-cream into a bowl.
  • Top with chopped pecans.
  • Drizzle with caramel sauce.
